Why not try this easy Easter Simnel cake recipe and serve on a wooden board.

Ingredients:

225 grams mixed dried fruit
110 grams soft brown sugar
110 grams butter
1 tsp mixed spice

150ml water

225 grams self raising flour

1 egg (plus 1 egg for decorating)

1 tsp lemon rind (optional)

1 tsp orange rind (optional)

2 tbsp apricot jam

450 grams marzipan

Method:

1. Mix the fruit, sugar, butter, mixed spice, water, lemon and orange rind in a pan and simmer for 20 minutes, allow to cool.

2. Pre-heat the oven to 190°C or gas mark 5 and line one 15cm (6inch) cake tin with baking parchment.

3. Stir in the flour and one of the eggs to the cooked mixture, then pour into the prepared cake tin.

4. Bake in pre-heated oven for 60 to 90 minutes. Test with a skewer to see if it is ready.

5. When the cake is cool, brush the top with warmed apricot jam and roll out half the marzipan to fit the top. Press firmly on the top and neaten the edges.

6. Roll the remaining marzipan into 11 balls.

7. Brush the marzipan with beaten eggs and arrange the marzipan balls around the edge of the cake. Brush the top of the ballswith the remaining beaten egg and then carefully place the cake under a hot grill until the top is lightly toasted.

8. Enjoy!
